A vacherin (say: vash-erin) is a classic dessert composed of meringue, ice cream or sorbet and whipped cream, often finished with fresh fruit or candied fruit. The name comes from the cake’s original resemblance to the vacherin cheese. It was first created in or near Lyon in the 1800’s.
