Anyone who’s read my blog for a decent amount of time knows that anything breakfast related is in my wheeliest of wheel houses. I just really, really love breakfast food, and that goes double for coffee cake. I love coffee cake so much that I even love the sh*ttiest of its breed. To me, all coffee cake deserves to be eaten.Rather than just a standard coffee cake recipe, which you can find on my blog here, I wanted to play with idea of baking a blueberry muffin type coffee cake within a shell of butter crust (from an old gooey butter cake recipe). Why? I don’t know, it just sounded good. But also, the insulation of the tart dough during baking will make a really moist, dense, classic pound cake-esque coffee cake and then of course add texture and flavor as a whole new element. I like the presentation of the finished product too, because a slice of something sweet always looks good.
This recipe is a little unique, not only because it is a style of coffee cake that isn’t typical, but because I created* the concept only a day or two before shooting the recipe. Specifically, the first time I’ve ever made this particular recipe is when I recorded it for the video.
One of the greatest creative benefits to pursuing a craft for a long time is that you begin to build a muscle memory for techniques. I guess you could just call that experience. It’s the kind of experience that let’s me understand how the various flavors and textures of a new dish will likely work without ever having to make it. I say “likely work” because of course you still have to make the thing and taste it. Tasting is the absolute core of a culinarian. Never, never trust a chef that says they don’t taste their own food, for whatever reason it may be!
Anyway without further ado, my recipe for a blueberry coffee cake pie-ish cake-like tart…kinda!
